Version 1:

Five potatoes, six potatoes, seven potatoes MORE

("MORE = you're "it")

Version 2:

One potater, two potater, three potater, four.
Five potater, six potater seven potater, more.
One. Bad. Spud.

(ed: Andrew says he definitely remembers he used to say "potater". Each line said while fists held out were struck in turn . Whenever the rhyme ended on one of your fists you lowered it. Whoever was left with one or both fists still held out was "it".)
